Fast gas chromatography electronic noses have emerged as powerful tools for odor characterization, offering rapid and reproducible analysis of complex volatile mixtures. This talk presents how this technology, combined with sensory-annotated chemical databases, enables simultaneous odor profiling, chemical compounds and odor characterization to bridge instrumental measurements and sensory perception. Application examples will cover sensory profiling, competitive benchmarking, reformulation, off-odor investigation, shelf-life studies, and quality control of finished products or raw materials in various areas, highlighting the complementarity between instrumental analysis and human sensory evaluation.
